Butter Prawn is a relatively new Malaysian creation--combining the best of Malay, Chinese, Indian, and western ingredients, this is a knockout dish in terms of taste, smell, and presentation.
The brown bits in the picture are killer in taste--the toasted kerisik (grated coconut) reveals layer upon layer of complex flavors--buttery, salty, sweet, spicy, and garlicky working off one another seamlessly and perfectly.This concoction is truly Malaysian and the taste is simply heavenly.
Recipe:
Butter PrawnIngredients1
lb large prawnsOil for deep frying
3 tablespoons butter6 bird's eye chilies (chopped)
3 sprigs of curry leaves (use only the leaves)
3 cloves garlic (finely chopped)
1/2 teaspoon salt
1 teaspoon sugar
1/2 teaspoon soy sauce
1 tablespoon Chinese cooking wine (rice wine preferred)
6 tablespoons of grated coconut (dry fried until golden brown)
Method:
Leave the prawn heads and shells on but chop off the eyes part.
Slit down the back to remove the veins.
Pat dry.
Heat oil and deep fry the prawns.
Drain and set aside.
Melt the butter, add bird's eye chilies, curry leaves, garlic, salt and fry for 2 minutes or until fragrant.
Add prawns, sugar, soy sauce, wine, and grated coconut.
Cook over high heat for 1-2 minutes, stirring frequently.
Serve immediately.

红烧排骨的做法
原料: 排骨, 姜, 葱, 香料(八角、 茴香、山奈、 桂皮、草果、丁香、香叶), 花椒(少许), 盐, 味精, 白糖, 料酒, 酱油(老抽)
做法:
1、排骨宰成4厘米的段放入沸水中除去血水捞起洗净待用. 姜切片, 葱洗净去头拴成一结(3根左右)
2、锅内倒油, 待油还是冷的时候同时放入白糖(要多, 大概一份糖, 2.5或3份油), 小火慢慢把糖炒化. 待糖水开始变成棕红色, 且开始冒棕红色的泡沫时, 马上把排骨倒入锅中炒匀, 接着放入姜片, 花椒和香料, 炒出香味后倒入少许料酒和酱油上色, 掺入清水, 加入盐和葱结, 大火烧开后转至小火慢慢烧至排骨粑软, 然后夹去锅里的葱和大块头的香料, 大火收汁, 待汤汁变浓时, 加入味精起锅即成.
3、先准备带点点肥的排骨(我觉得全瘦的没这好吃),想吃多少就准备多少,可叫卖肉师傅替你剁好;
4、排骨加水加适量盐煮至八成熟,时间充足的话可用电饭堡煮; 5、捞出排骨(汤备用),沥干后放入油锅(不要太多油了,因为炸排骨还会出油的)翻炒,先倒入黄酒炒出酒香,再加酱油炒出酱香,然后往锅里浇汤,一次不要浇太多,再炒,多浇炒几次,最后一次炒至汁半干时,
注意事项:
1、黄酒酱油可多放些,上色。酱油一定要后一点放,而且不要炒太久,因为容易糊锅子,一定不能放味精;
2、一定要多翻炒,这样排骨的色泽才会均匀好看;
3、这种做法的特点就是步骤简单,又入味。还有,多出来的汤还可以煮小菜,而且撒点葱花就可以直接喝了,真是一举多得呀

莲雾(学名Eugenia javanica Lam),又名天桃,原产於马来半岛,在马来西亚、印尼、菲律宾和台湾普遍栽培,是一种主要生长於热带的水果。台湾的莲雾是17世纪由荷兰人引进台湾,台湾屏东是最有名的产地。随著科学昌明,莲雾除了原来的红色和绿色以外,还有新品种的黑色莲雾。 莲雾是桃金娘科(Myrtaceae)赤楠属的热带常绿果树,原产马来半岛及安达曼群岛,目前仅东南亚地区有经济栽培。莲雾又名辈雾、琏雾、爪哇蒲桃。莲雾在台湾栽培历史颇为悠久,早在17世纪就由前荷兰人自爪哇引入,仅在台湾各地农家庭院及果园零星种植。近来由于品种及栽培技术的研究突破,使莲雾产期提早并提高品质,现被视为消暑佳果。在台湾20多种主要重要经济果树中名列第6、7位。台湾莲雾的品质最佳,果实具有特殊的芳香,清脆可口,模样雅观。高品质莲雾被称为“黑珍珠”,每公斤售价上百元(新台币)。栽培管理好的,一年可收获5次,特别在春夏干燥炎热季节,作为清凉解渴果品,很受欢迎。 莲雾是一种可治多种疾病的佳果,性味甘平,功能润肺、止咳、除痰、凉血、收敛。主治肺燥咳嗽、呃逆不止、痔疮出血、胃腹胀满、肠炎痢疾、糖尿病等症。用果核炭研末还可治外伤出血、下肢溃疡。另外,台湾民间有“吃莲雾清肺火之说”。人们把它视为消暑解渴的佳果,习惯用它煮冰糖治干咳无痰或痰难咯出。莲雾果实中空(也有实的),状如蜡丸,在宴会席上人们还喜欢用它作冷盘,是解酒妙果。它淡淡的甜昧中微带点酸,有一股苹果的清香,食后齿颊留芳。在莲雾中心挖个洞,塞进肉茸,用猛火蒸约10多分钟,是台湾著名的传统名吃,美其名曰“四海同心”。用莲雾切片放盐水中浸泡一段时间,然后连同小黄瓜、红萝卜片同炒,不但色、形、味俱佳,而且清脆可口,是一道不可多得的夏令食疗佳肴。莲雾不耐贮藏,一般室温下只能贮存一周,采收包装后宜立即送往市场出售。莲雾以鲜果生食为主,也可盐渍、糖渍、制罐及脱水蜜饯或制成果汁等。 海南目前是亚洲最大的莲雾种植基地。
